Thanks for the response! I ended up using the [HTTP](https://github.com/janeczku/rancher-letsencrypt#http) method rather than the DNS based challenge and it worked like a charm. Cheers!

Removing `icheck`'s entry in my project's `composer.lock` file and then re-running `composer install` fixed the issue for me.
