Update default katharsis version (currently 2.3.0)

Webpage currently suggests version 2.3.0, which isn't the latest release.

but then the given examples on this [page](https://www.thymeleaf.org/doc/tutorials/3.1/usingthymeleaf.html#temporals-java.time) don't use it. I tried, it works. It's just a copy paste issue of another section's examples I believe, so no biggie.
