Remember last used time and date

At the moment, whenever a new transaction is added it is prefilled with the current time and date. That is nice until you have to add transactions for past days....

Add details to documentation on how to change the keybind

I already have the color picker shortcut bound for something else but the documentation doesn't mention how to change the keybind to show ColorPicker.
