Add symfony 6.1 support

The Symfony 6.1 requires PHP 8.1+, because of that i create another pull request. Probably will require a different version. This PR depends of https://github.com/DZunke/FeatureFlagsBundle/pull/36

Bumb minimum Symfony version to 6
