Is there a way to increase the VNC resolution of the host so more/all info fits on the screen?

I have the same request! The possibility to report a zero value will give less headache and prettier looking graphs.

If there is a way to make the sensor "Total PV Generation" keep its value even if the inverter goes offline it would be nice. That value is actually not...
