UTM is able to detect my enclosure when I use a usb 2.0 cable as @thoschl mentioned. On virtualbox, I had to run with `sudo virtualbox` from the mac terminal...
Just adding that the path for my pandoc was in /Applications/RStudio.app/Contents/MacOS/quarto/bin/tools
