channel_config module API modifications

Haven't forgotten about this one! FYI, `operation: create` only allows you to create new channels, it does not allow you to update them. I'm not sure about the splitting out...

@vegetablest there is both `injectRequestHeaders` and `injectResponseHeaders` available in the alpha configuration: https://oauth2-proxy.github.io/oauth2-proxy/configuration/alpha-config/#alphaoptions Also interested in using this with `injectRequestHeaders` to access additional ID token claims.

Connection strings are incorrectly parsed and overwritten by mongo db driver

I've just hit this same issue - the `url` we specify gets most of its query parameters stripped out, and they are not passed to the underlying Mongo client library...
