est_server_http.c build issue

When libcoap is enabled in the build of libest, the build breaks in est_server_http.c at line 1624 -- apparently the definition of coap_endpoint_t is incomplete so the dereference fails

Ubuntu 20.04 can't find a safec library that is compatible with libest build

I've tried downloading a number of safec library implementations from the Ubuntu repository and none of them match the "CiscoSafeC" tag that the configure system is looking for
