Such scenario would perfectly mimic real use cases. I would also be very curious to read a definitive answer on the subject.
Have tried adding -n 1 to command ? In my testing with Debian Bullseye's sipgrep, this ends the capture just after the INVITE.

Attaching to attestations a patten defining for which destination numbers, Stir/Shaken attestation should be done seems very fine to me.
Any update on this ? I asked the Asterisk Forum, for experience with cross-border calls to learn if others also prefer to remove Stir/Shaken headers when such are not required....
