I went to collect a log file to try to see what was really happening, and noticed that my version of Proton was one too far back for the PROTON_LOG...
Unfortunately, Valve has no control over that. That's an option that would have to be added by the developer...
I also encountered this issue (Arch Linux, GNOME, X11, AMD GPU). However, EnderIce2's solution of using gamescope seems to work just fine for me.
