It might not be the fundamental solution you're looking for, but creating the polling endpoint with `longpoll.create("/poll", { maxListeners: });` does seem to increase the limit.
Similarly, `RUST_LOG=warn,nostr_rs_relay=info ./target/release/nostr-rs-relay --config /home/username/nostr-rs-relay/config.toml` seems to work fine for me
