This is likely something we could easily make configurable using the **[poise_service_options](https://github.com/poise/poise-service#poise_service_options)** resource. It looks like this is overridable using [node attributes](https://github.com/poise/poise-service#service-options) as well.

Compiled git is compiled (in Ubuntu / Debian) using GNUTLS instead of OpenSSL

This is something that I would probably support for source builds. If we moved to use the [ark cookbook](https://github.com/burtlo/ark) it is pretty straightforward to allow for overrides for environment options....
