Sure, I think having some way to alter those scores would be a good idea (we could hide those tags under "advanced" or something - extras on demand)
We should also cleanup which scores get shown in the `make scores visible` form:  Maybe only: ``` - total - regrade - composition ```

Alternatively, we could just set the `custom_submission_time` right at the api-layer before we return the backup info, which is what I think I'll do so the attribute is set retroactively.
