Which open source logging system _should_ we use? Leaning towards ELK ... but if anyone knows a _better_ one I'm all ears!

Our apps deployed to Heroku have request and error logging included which is great. But if we are going to deploy our apps to _any_ infrastructure #59, logging is _essential_....
