Allow setting the containerlab version as an env var when using `utils/quick-setup.sh`

`utils/quick-setup.sh` does not allow containerlab version to be pinned. I think the least surprising behavior would be that if you use, for example, v0.69.0 of the `utils/quick-setup.sh` (https://github.com/srl-labs/containerlab/blob/v0.69.0/utils/quick-setup.sh) it will...
