I also recently struggled with this, mostly to make Julia RCall find the path to R under `macos-latest`. It worked with [this setup](https://github.com/cecileane/PhyloPlots.jl/blob/072af047ed5737f33790bae22c700efc70462575/.github/workflows/ci.yml#L19).
