Dockerfile: Use ENTRYPOINT instead of CMD to launch UMS.

@SubJunk It's ok approve - these are latest conventions.

Packaging

With the migration, I'm able to create HTML docs as claimed. So I believe it's good for use.

Some small fixes of mine

I think instead of skipping assembled components from BOM, it should be listed in a category called "Assembled".
