如果是源码编译运行的话，可以sudo运行ss-qt5，改完之后手动保存一下。下次不用sudo运行也能看到改动结果。 AppImage没有试过，应该也是差不多的操作。
我从ubuntu商城装的话，也是这个问题。后来改成从源码编译安装就可以了。 我的ubuntu上源码安装有个小坑。make install的libQtShadowsocks位置在usr/local/lib，需要ln到/usr/lib里

你的JDK是openjdk吗？ openjdk里没有javafx的。单独装openjfx或者换oracle的jdk
你可以找一下oraclejdk的位置，自己手动改一下PATH
