Adding Layout to logback-ecs-encoder

Any chance such a function will be added? Or am I maybe missing something to achieve the above with the current encoder or available resources?

Any updates or remarks on this? Am I missing some documentation or is this not a problem for many? Using the generated classes in Spring web service 3.0.0 creates this...

An update if this is being considered would be really appreciated. Automated cleaning of ECR repositories is far more risky this way.
