It's a crash with Optifine. Try using Optifine 1.16.5 G8 https://optifine.net/adloadx?f=OptiFine_1.16.5_HD_U_G8.jar&x=6290
I have a similar issue where dragons will disappear altogether when leaving the loaded chunk. Could be related.
Replicated on my end as well.
