I'm having this same issue, but with much smaller models. Any model will crash on my iPad Pro M1 8GB. I think the app needs to be made to work...
You can still try to run the commands, but if they don't work, you might need a newer Mac.
An alternate method could be to use something like OpenCore Legacy Patcher and run newer macOS on an older computer, but I don't know how well if at all that...
