Config file gets overwritten on game/plugin relaunch

I tried editing the RainbowMage.OverlayPlugin.config.json file to make "EndEncounterOutOfCombat" false, so that I can log the entire dungeon duration. This works, but everytime the game gets relaunched or the plugin...
