Again, as wooferzfg said, you are already able to customize the colors in the layout settings in both LS One and LiveSplit.

Wine doesn't work with all applications. Last I tried it with Wine, it didn't go well.
You can't really expect good results on an application that's geared toward Windows on a compatibility layer tbh. One of the downsides about Linux, really.
If you're using an autosplitter, the autosplitter may not support game time. If you are not using an autosplitter, game time will remain blank unless you use an autosplitter.
That might just be for the timer, although I can't test for myself as I don't have the game.
Use the SpeedrunIGT mod, it's much better.
Maybe try to exclude it from antivirus to see if that works. Other than that, I'm not sure what the issue could be.
