Not sure if this is actually an issue with bcachefs since support for the NAS I'm running on is very new in Linux. I can create single/multi disk file systems...

Building for aarch64-linux seems to just work. But to expose the package in the flake it is necessary to add the aarch64-linux build target to the flake.nix
