 This gif above was created on [test25](http://test25.bigbluebutton.org/). As you can see, sometimes "text" created when multi-user whiteboard was off disappears too

That's correct regarding scheduled meetings. This is their [google group](https://groups.google.com/g/bigbluebutton-dev). Perhaps you could ask for advice there?

Of course there isn't signature if you're using finger. Finder is not computer mouse, you know? How can anyone know where your finger is in the air? Try using (tablet/phone)...
