I think the explanation can be found here: https://github.com/edufolly/flutter_bluetooth_serial/blob/a76b5f22e81612104a8dc461705c2bba2903011a/lib/FlutterBluetoothSerial.dart#L215 my understanding is, the platform cancel the scan after some period and flutter_bluetoth_serial simply follows it and also cancel/close the stream.
