Builds failing b/c it seems sphinx-exercise is incompatible with sphinx=7 and in fact requires sphinx<6, which is from back in 2022... (https://github.com/executablebooks/jupyter-book/issues/2122 & https://github.com/executablebooks/sphinx-exercise/issues/64)
