App Settings: the editor always matches the device appearance setting regardless of the in-app appearance setting
Steps to reproduce:
- On the device, change to Settings > Display & Brightness > Appearance > Dark.
- In the app, go to Profile > App Settings > Appearance > Light.
- Create a new post.
- Repeat the steps except swapping Light and Dark.
Result: the editor appearance does not respect the in-app appearance setting. (2m31s)

Tested with WPiOS 15.1.0.2 TestFlight beta on iPhone 6S iOS 13.3.1.
I can still replicate this issue, on IOS the phone is set to light but I changed the WP in-app settings to dark:
On a Post the background is light even though the WP App Settings have been changed to dark:
WordPress 6.0.1 Gutenberg 13.8.1 active

Can you share which theme you have enabled? For block-based themes, we use the theme's background and we don't change it for light/dark mode.
