Timeline: Enable Custom Time Intervals and Dynamic Cell Sizing

This PR introduces support for configuring custom time intervals (e.g., 10, 15, 20 minutes, or any other duration) and automatically adjusts cell sizes based on the specified period.

Fixes https://github.com/wix/react-native-calendars/issues/2544 : How to adjust TimelineList interval/minutes?
