Windows 8.1 reported instead of Win11 (when using Wine v10)

Do you guys see anything wrong with this picture (see screenshot below)? Perhaps the most unsettling aspect is the fact that this machine (which was designed as a 64-bit Windows 11(!)), has been built on Wine 32-bit. How do I change that to Wine 64-bit? How do I make Wine64 the default?
