Update epsg.io info in README.md

Current EPSG.io endpoints will be deprecated after the 1st of February 2025: https://epsg.io/docs#migration I updated the docs to point the new endpoints as recommended in the migration guide for epsg.io

@ibgreen I restructured and hopefully clarified it better. If it's not OK for you to mention a commercial service we could just add a link to https://epsg.io/docs#migration instead
