Wallet UI: rules of thumb for large text

Description

We should create some rules of thumb for how UI components should scale with length of text. This applies for users with large fonts enabled as a device setting, but also applies for users using languages like Russian which often has longer strings than English.

• [ ] Create some rules of thumb that should be applied by default when developing/designing features going forward
• [ ] Ensure the rules would solve the situation described in #2525
• [ ] Document these rules in notion and share with the wider eng team so that everyone is aware
• [ ] Create an issue for applying the changes retrospectively for the app
