NEXTCLOUD_IMAGE_TAG is pinned to 2 year old version

The NEXTCLOUD_IMAGE_TAG is pinned to 12-fpm, but 12-fpm is roughly 2 years old

I would like to create a PR. Should I use?

@tobru and @klml I've forked the project and I'm working on updating the deployment template.

However, the permissions on /data are too open. I'm not sure how to fix it.
