I was wondering if there is any documentation on ChessDotNet as I couldn't seem to find any.

Hi, thanks for your interest! There is https://github.com/thomas-daniels/Chess.NET/blob/master/Samples/BasicUsageSample.cs but that's indeed pretty much everything there is. Since I am no longer maintaining the library, it will likely stay that way.
