Apple Silicon M1 and Windows Fix: Update sharp version and add lockfile

sharp is causing build issues on Windows, updating it to current latest fixed it.

This is similar to #7, but hopefully this time the lockfile should hold a grip of other dependencies to vary and not cause it again.
