If GDAL >= 3.6 is available, use STAC output from `gdalinfo`

https://github.com/OSGeo/gdal/pull/6265 and https://github.com/OSGeo/gdal/pull/6309 added a stac section togdalinfo output. If available, we should use these values when (e.g.) creating an item.
