Update to flapdoodle.embed.mongo 4.x

Hi, this PR updates the plugin to use de.flapdoodle.embed.mongo 4.4.0.
Which should enable the usage of mongodb 6 (not tested) and recent operating system like Linux Mint 21.1.

I think all options except downloadUrl are backwards compatible with previous plugin versions. downloadUrl now is only the base download url, because I could not figure out how to configure the exact download url. The only available docs for flapdoodle 4.x seam to be this Howto.md. Do you think base url is good enough or should it really be an exact url? I never used the downloadUrl option.

I also had to lower the jdk requirement since some of our projects still use jdk 11.
The plugin does not need anything from jdk 17 so in my opinion it does not make sense to force users to upgrade. At least not until jdk 11 is EoL. What do you think?
