Kubernetes version compatibility is outdated

We (try to) maintain k8s compatibility in alignment with the official k8s releases, i.e. latest, latest-1, latest-2.

The documentation should probably reflect that: https://github.com/sorry-cypress/gitbook/blob/master/cloud-setup/kubernetes.md

Raising this because I'm not in a position to contribute a fix right now.

I also tested it on the current version with k3s (v1.27.3+k3s1) and everything works properly.
