Automated uninstalling a plugin

Hey there,

firstly a big thank you for this wonderufl repo!

For me it works like a charm but there is one question I can't answer myself.

How can I uninstall a plugin in a CI/CD Workflow?

Right now we build a new image on push where all the composer depencies are installed an then installed and activated in shopware from the entrypoint.

If I would just remove a plugin from composer.json obviously the plugin files aren't present anymore but it still would be marked as installed in Shopware? Even if not, there would be no possibility to run the uninstall logic of said plugin?
