[WIP] Remove Amazonka S3 and Kinesis dependencies

Leaving the API Gateway stuff in as that only requires amazonka-core and is used in the examples and tests.

Intending to put the removed things into a separate package, so that merely depending on s-h doesn't drag the heavy amazonka stuff in.
