[Feat] Utilize esbuild and cssbundler to speed up asset compilation

Desired Behavior

We want to be able to utilize esbuild & cssbundler instead of webpacker so that builds are faster and easier to manage.

Criteria for Completion

• [ ] Webpacker is removed and replaced with esbuild
• [ ] Styling & functionality stays consistent before change. (if anything needs to change, please bring it up)
