ROUTING-738: some improvements to Routing and Recording examples docu…
…mentation and CMakeLists files
Summary
The following changes are part of issue ROUTING-738. I have been reviewing the README and CMakeLists files for the Routing Service examples. I have corrected minor issues, but mainly the idea was to add notes so the user knows that they can export the CONNEXTDDS_ARCH variable so that the Routing/Recording scritps know what binary to execute.
Details and comments
The other minor changes are related to some consistency between examples, or tweaks present for some examples but not for others, etc.

@lulivi , the CI check failed, but it failed because it cannot find the expected version (6.1.0). Is this expected? Who is in charge of managing what's on /home/travis/?
Hello @juanlu-rti, @ManuelJNunez is working on that right now. We moved from Travis-CI to GitHub actions and we are testing everything in @ManuelJNunez's fork. When it is fully ready, we will merge it to this repository again.
