Where possible, update references to the redismod container to use redis-stack instead

This is something we can chip away at over time, but we should update references to redislabs/redismod to use redis/redis-stack. We will need to keep redislabs/redismod for tutorials that use Redis Gears and RedisAI as these are not part of Redis Stack.
