Test Data Proxy Client (Node + edge) on more environments

Right now we only test the Node client on plain Ubuntu (node), but we should also test on Netlify Serverless functions (via CLI) and potentially other cloud platforms that could do weird things.

Same for the edge Client.

First task: Define list of actual platforms and tests to add.
