Run clickhouse-server instead of clickhouse-client

Per offline talk with clickhouse developers, clickhouse-client will never be updated as it's part of the server binary and the change is the recommended way of using it. Changing the invocation from clickhouse-client to clickhouse-server allows it to work under arm64, which became possible recently.

Apologies, I thought that you had merge rights @michaelwittig. I guess I should ping for @ukutaht review, as he merged the last one.

I got confused because your changes were merged with the rebase, which didn't show that you were not the person merging it.
