Add tests/documentation for accessing service configuration fields

Context

• Currently you have to refer to things as "@input.serviceVar.config.params", etc.

Implementation sketch:

• Add tests for current behavior
• Add documentation to working with services documentation
• Create ticket if we want to change the behavior
