Update to Payload 2 and Remix 2

Hi, since there have been significant releases to Payload and Remix it would be good to see this example updated.

I've spent a couple of hours trying to wrangle the changes, but I've never used turbo, Payload, or Remix for more than a day or two, and it's just too much for me to take on.
