Use GHCR in helm chart

We need to move over to using GHCR images in the helm chart once the GH Actions migration has gone in

Also, each release will build a new set of images all tagged with the release version, these will all be the same for a release and need to be updated in the chart once the version is known.

Expected Behaviour

GHCR images and correct versions used in helm chart

Current Behaviour

dockerhub images used with their own versions
