5.1 is not yet available, putting this in draft for now

FYI @raphael-proust we added experimental 5.1 builds into ocaml-ci https://ocaml.ci.dev/github/ocsigen/lwt/commit/e124637750b696a2c662315721c1668f98e01d81/variant/debian-12-5.1_opam-2.1.
