[DOCS] unified diagram style

Create a unified set of diagrams with something like Mermaid for ease of editing and overall uniformity across

• [ ] sdk.nymtech.net
• [ ] docs
• [ ] devportal
• [ ] operators docs

This will replace existing diagrams and ascii with a single style of diagram.
